Oven Temperature: 400 Degrees
Cook Time: 18-20 Minutes
Ingredients:
- 1 1/2 Cups Whole Wheat Flour
- 1/2 Cup Oats
- 1/4 Cup Vegan Sugar
- 1 Tablespoon Baking Powder
- 1/2 Teaspoon Salt
- 1 Teaspoon Cinnamon
- 1 Tablespoon Chia Seeds
- 1 Tablespoon Flax Meal
- 1/4 Cup Oil
- 1/4 Cup Applesauce
- 1/2 Cup Pumpkin Puree
- 1 Cup Almond Milk (any vegan milk will work)
- 1/4 Cup Craisin's
- A Handful of Pumpkin Seeds to put on top of muffins.
Directions:
- Pre-heat oven to 400 degrees
- Mix dry and wet ingredients separately, then mix together.
- I like to line my muffin tins with liners but I have used coconut oil as a greasing agent on the pan when I don't have the liners handy.
- After filling the muffin tin put it in the oven for 18-20 minutes
- Upon removing from oven set muffins on cooling rack
